Guest post: 3 easy dairy-free pancake recipes

Pancakes have been a favourite with the children for a long time we generally have them on a Saturday or Sunday, which gives me the chance to experiment. With Oscar allergic to dairy I’m always having to adapt and substitute recipes to suit him. Sometimes it works, sometimes not so much! Having tried and tested many variations here are our top 3 recipes for dairy-free pancakes.

Apple and Cinnamon Pancakes:

  • 1 Cup Flour
  • 1/4 cup Apple Sauce (diced apple would work ok if you didn’t have this).
  • 1 Cup Almond Milk
  • 1 tsp Cinnamon
  • 1/2 tsp vanilla
  • 2 tbsp Dairy Free Butter

Combine all the ingredients, mix well and cook! It really is as simple as that, we added the raisins after they were cooked. Next time we’ve decided to add them to the mixture before cooking, you could however, put any fruit into this recipe. Avocado and blueberry pancakes is another favourite in our house!

Avocado & Banana Pancakes

  • 1 and 1/2 Cups of Flour
  • 3 tbsp Dairy Free Butter
  • 1 and 1/4 Cup Almond or Coconut Milk
  • 1/2 Avocado
  • 1 Banana
  • 1 Egg

As before, combine all ingredients and mix well cook and top with a drizzle of honey!

Coconut, Raspberry & White Chocolate Pancakes

  • 1 and 1/2 Cups of Flour
  • 1 and 1/4 Cup of Coconut Milk
  • 1/2 Cup White Chocolate Chips
  • 1 Cup Raspberries (we use frozen)
  • 1 Egg

This is definitely the most indulgent of the three recipes, but we all deserve a treat now and then right? You could even drizzle some honey or maple syrup on the top!

Each of these recipes is quick and easy to make – which as a busy mum of 3, speed is of the utmost importance! There are so many variations of these pancakes that you could make so don’t be scared to switch it up and throw in any fruit/veg that you like! It’s a fantastic way to sneak healthy foods into your children’s meals.
